Mantia's Spring Cooking Classes

We know we promised this sooner, but we've been SO busy! But we think you'll be pleased with the variety of classes we are offering. We are pleased to welcome back the very popular Demitrie Phillips, and are delighted that Jeffrey Dunham will be rejoining us for one class. We've had lots of requests for skills and techniques classes, so we are offering several that have been the most requested. We are fortunate to have Chefs Sam Dunkel and Matt Gelinas to help us. All classes are at 6:00 PM, and cost $35 per person unless otherwise indicated. Advance reservations are required! Give us a call to sign up or for more information!

SKILLS AND TECHNIQUES

Chef Sam Dunkel, of Bittersweet Restaurant, is a graduate of the Atlantic Culinary Academy, a Cordon Bleu Program. He will provide instruction on knife skills, beginning with the simplest techniques in the first class and progressing to more advanced projects, including decorative garnishes, in the second. Please bring your own chef’s knife, or ask us and we can arrange for you to buy one. These are “hands-on” classes, with limited enrollment. $50.00 per person.

Chef Matt Gelinas, also of Bittersweet Restaurant, is a graduate of the New England Culinary Academy. We’ve had many requests for classes on stocks and sauces. Chef Matt will give instructions on basic stocks, then on the various “mother sauces” of classic cuisine, with variations on each and suggested uses.

Wednesday, April 4: “Tapas: the Little Dishes of Spain.” With the late dinner hour in Spain, most folks enjoy a few small tastes of classic Spanish appetizers in the late afternoon or early evening. Whether a few for appetizers, more for a cocktail party, or a whole host of them for a grazing dinner, these are easy, appealing and tasty!

Wednesday, May 2: “A Spanish Dinner Party.” Using the classic ingredients of Spanish cuisine, we plan and cook a full dinner. Easy and affordable, your guests will be so impressed!

GUEST CHEFS

Demitrie Phillips may look familiar to our long- time friends; he was our first chef! He left us to go to Florida to work in several restaurants, then got a degree from the New England Culinary Institute. Now chef at the trendy down-town restaurant, Meditrina, he comes back to share lots of his experiences with us.

Wednesday, April 25: “A Mediterranean Meal for Spring.” Demitrie draws on his heritage to share some wonderful foods perfect for this time of year.

Jeffrey Dunham, Executive Chef/Owner of the popular East Memphis Grove Grill, returns. A graduate of the Culinary Institute of America, with many years in the restaurant industry, he is the winner of many awards, including the prestigious Silver Plate Award.

Thursday, April 12 : "Southeast Regional Cuisine." From the Carolinas down, a new style has evolved using new twists to traditional dishes. Chef Jeff presents exciting new dishes, with "themes and variations," to brighten up your fall and holiday dinners.

AND ALYCE COOKS A LITTLE MORE:

Monday, March 26: “Cook Once, Dine Twice.” We keep hearing folks say they don’t have time to cook. What if you could cook and have a plan for using the leftovers in dishes that would be as delicious and appetizing as the original? Alyce shows you several ways to do just that.

Wednesday, May 16: “Super Seafood.” Seafood, is tasty, nutritious, low-fat, and as a bonus, fast and easy to cook. Alyce shows techniques and styles to suit every palate!

Thursday, May 24: "The Parisian Weekday Gourmet." It doesn't have to take hours to make a great meal for friends or family. Alyce will demonstrate a full elegant dinner that can be prepared in no more than an hour-- and you won't be to tired to enjoy it yourself.
